Pureté
Description
Pureté is one of Lille’s most compelling gastronomic addresses, located at 79 rue de la Monnaie in the heart of Vieux Lille — one of the oldest and most picturesque streets in the city. Helmed by chef Gérald Guille, a native of Étaples who trained under Michel Roth and appeared on Top Chef in 2012, the restaurant earned its Michelin star and consistently scores highly with Gault&Millau since its opening in 2021. Guille’s philosophy is that of a creative, uninhibited gastronome who draws deep inspiration from the landscapes and produce of the northern coastline: scallops from Boulogne, trout from Artois, herring from the Channel, saffron from the Somme, and edible flowers from local growers all appear in menus of elegant balance and emotional depth. The long, narrow room is furnished with pure materials — earthenware, concrete, wood, and leather — creating a focused and tranquil atmosphere that perfectly mirrors the chef’s culinary approach: clean, direct, and deeply considered. Tasting menus are offered in three formats for the evening and a single accessible formula at lunchtime, each available with a curated wine pairing. Open from Tuesday evening and Wednesday through Saturday for both lunch and dinner, Pureté is an essential destination for any lover of contemporary French fine dining in northern France.
