Description

HAUT is one of the most spectacular and exciting restaurant openings in Belgium in recent years, located on the 28th floor of SKY Tower One in Ostend — the highest restaurant in the country — at nearly 100 metres above sea level. Chef Dimitri Proost, celebrated as Gault&Millau Highest Newcomer of the Year 2025 with a score of 15.5/20 and three toques, and newly awarded a Michelin star in April 2025, presides over a vast open kitchen set against a breathtaking panoramic terrace offering 360-degree views over the North Sea, the city, and the Belgian hinterland. The restaurant’s dramatic black box entrance and intimate welcome ritual, designed by host Randy Degroote, set the tone for an evening of exceptional hospitality. Proost’s cuisine is meticulously crafted around the finest North Sea produce, elevated with subtle Japanese touches: Norwegian deep-sea prawns paired with grey shrimps in a tom kha khung preparation with lemongrass and galangal, turbot with tempura of its own beard and a vermouth and calf’s tongue sauce, and a grey-legged partridge combined with savoy cabbage and trumpet mushrooms demonstrate his extraordinary ability to weave global precision into the local coastal larder. Both a six-course tasting menu and à la carte options are available. Open Wednesday through Sunday for both lunch and dinner. A defining address for Belgian gastronomy.
