JAAN by Kirk Westaway is an internationally celebrated fine dining destination that occupies the highest floor of the iconic Swissotel The Stamford in Singapore. Helmed by Executive Chef Kirk Westaway, a native of Devon, England, the restaurant is dedicated to redefining British cuisine through a modern and innovative culinary lens. The recently renovated 35-seat restaurant takes guests on a multi-sensorial journey through Devon, beginning at the lift on the 70th floor, where brass-framed glass doors open to a corridor lined with artworks by Australian artist Steven Cross. The main dining area frames panoramic views of Singapore’s coastline and city skyline, enhanced by a dramatic light installation inspired by the hawthorn trees of Devon. Chef Westaway’s philosophy revolves around seasonality and the provenance of British produce, with each dish crafted to reflect the natural cycles of England’s countryside. His tasting menus present modern interpretations of British classics, from the celebrated fish and chips reinvented with caviar and lemon zest, to a non-alcoholic gin and tonic palate cleanser. As Singapore’s first Krug Ambassador, the chef places equal importance on the beverage programme. The wine list features nearly 700 labels. JAAN has held two Michelin stars consecutively since 2021 and features regularly on Asia’s 50 Best Restaurants list.
